The picture of a woman with three children in front of a tent house in the desert sands, is enchanting.
I wonder what grows there and what she will be eating & feeding to the children!
It is beautiful to see her smile even in the scorching deserts.
Desert life is hard & enigmatic!

Makrout bel Ghars

Here's the recipe (in French)
Makrout bel Ghars (Losanges aux dattes)
Ingredients:
3 mesures de semoule moyenne
1 mesure de gras (2/3 de beurre,1/3 d'huile)
1 pince de sel
eau de fleur d'oranger
500g de ghars(Datte reduit en pate )
huile pour friture
miel
Preparation:
Melangez dans une ghasaa (bol) la semoule, sel.
Formez une fontaine,versez le gras.Melanger bien le tout.
Dans une casserole , melanger de l'eau avec 2 ou 3 cuilleres a soupe d'eau de fleur d'oranger.
Prenez une portion de la pate de semoule et arrosez-la d'eau en melangeant du bout des doigts sans
petrir jusqu'a ce qu'elle se tienne bien en bloc.
Formez un genre de boudin,essayez de faire une sorte de rigole au milieu.Introduisez un petit
rouleau de pate de datte dans cette rigole.Ramenez les bords de la pate de semoule sur la pate de
datte pour bien enrober celle-ci, applatissez ensuite a l'aide d'un taba'(genre de petite planche en
bois a empreinte, appele aussi marcham.) sur 4cm de large et 1,5cm d'epaisseur. Decoupez la bande obtenue en losanges. Recommencez l'operation jusqu'a epuisement des 2 pates
Faites frire les losanges dans une friture genereuse (entierement couvert d'huile). Egoutez-les.
Une fois les gateaux frits, trempez-les dans du miel fondu avec 2 ou 3 cuilleres a soupe d'eau de
fleur d'oranger pendant qu'ils sont encore chauds, cela leur permettra d'absorber bien le miel. Vous
pouvez les arroser une 2eme fois just au moment de servir.
