INGREDIENTS

1 cup olive oil
3 tablespoons paprika
1 1/2 tablespoons ground cumin
1/2 teaspoon ground red pepper
9 pounds top sirloin of beef; cut in 1 1/2 inch cubes

2 pounds, medium (96) fresh white or crimini mushrooms

Salt as, needed
Fresh ground black pepper, as needed

DIRECTIONS

Whisk oil together with paprika, cumin and red pepper; pour over meat. Marinate in refrigerator at least 8 hours or overnight. Drain, reserving oil.

Thread 6 ounces beef cubes and 4 mushrooms alternately onto each of 24 skewers; refrigerate.
