~VEGGIE & ALMOND PASTILLA ~
These North African style pastries can be served as a light lunch or starter. Simply serve them with salad or as part of a mezzé with houmous, olives and pitta bread. ~ yum
~INGREDIENTS : ~
500g pack Findus Wok Chinese vegetables {I’m sure any veg. would work just as nicely
}
1tbsp vegetable oil
50g no-soak dried apricots, finely chopped
50g toasted flaked almonds
2tsp ground cinnamon
2tbsp coriander, roughly chopped
Salt and freshly ground black pepper
200g pack filo pastry
100g melted butter
~ COOKING INSTRUCTIONS : ~
Pre-heat the oven to 180ºC, (160ºC if fan assisted) 350ºF or Gas Mark 4
Fry the Findus Wok vegetables according to the pack instructions with the oil. Put to one side and allow to cool.
Add the apricots, almonds, cinnamon and coriander to the vegetables. Add seasoning to taste.
Take a sheet of filo and cut it in half to give 2 x 13cm (5”) squares. Brush each piece with melted butter and place one on top of the other, butter side up so they are off set (not sitting squarely on top of each other.)
Take another sheet and repeat this so you have four filo squares buttered and off set on top of each other. Spoon some of the spiced vegetable mix onto the middle of the filo and wrap the filo up to give a small parcel or money bag.
Repeat this process using the remaining filo sheets and vegetable mixture. The mixture should make 6 filo parcels. Brush each pastilla with melted butter
Put onto a greased baking sheet and bake for 20-25mins until golden brown.
Serve the pastilla warm.
Alternatively, refrigerate them overnight and then bake them.
