Semolina Cake





2 tbsp. Tahini
4 cups Semolina Wheat
1 1/4 cups Pure Butter Ghee
1 cup sugar
1/4 tsp. baking soda
1 1/4 cups Plain Yogurt
2 cups Attar
1/4 cup blanched almonds
Dash of Salt

ATTAR:

3 cups sugar
1 cup water
1 tbsp. lemon juice

Mix semolina, sugar and butter together in a medium bowl. Stir baking soda and baking powder in yogurt and add to semolina mixture. Mix thoroughly. Grease 17" x 12" pan with Tahini. Pour mixture into pan and smooth the top with 2 tbsp. yogurt. Cut into diamond shapes. Place a blanched almond on each piece. Bake in a 400 degree preheated oven for 30 minutes or until brown. Let stand for ten minutes.

Prepare Attar: Boil the sugar and water in a medium saucepan. Add the lemon juice and continue boiling. Keep boiling until the mixture thickens slightly but does not darken in color.

Pour Attar over the surface of the semolina cake. Serve.
