    Ingredients:

    * 1 kg of lamb meat

    * 1 onion, minced

    * 1 kg of artichoke

    * 1 kg of green peas

    * 1 Teaspoon of ginger

    * 1 pinch of saffron

    * 1 clove of garlic

    * 3 Tablespoons of olive oil

    * 1 Preserved lemon

    * Salt and pepper


    Preparation:

    Make a mixture of 2 tablespoons of olive oil, ginger, saffron, and garlic. bathe the meat pieces into the mixture until all sides are oiled.

    Put 1 tablespoon of olive oil in the center of the pan and place the meat pieces on top of it. Add the onion.

    Clean the artichoke, take out the leaves and the core and only use the heart. Skin your preserved lemon and cut in 1/8ths.

    Place artichokes on top of the meat and top it with pieces of preserved lemon skin. Add 4 tablespoons of water. Add salt and pepper.

    Place on gas stove top on low heat and check it every 30 minutes. Check for tenderness of artichokes. Add water by the table spoon as needed. Then add the green peas and cook for 20 more minutes.

    I used to love this dish , my maid in Morocco used to make delicious ones . she was an excellent cook . she also made it with fennel and peas , they tasted out of this world . I cant find artichokes in my supermaket (UK) and i just dont have the time nor energy to clean them .. I do use peas and carrots and potatoes , easier that way . I love the lemon peel in the dish (sometimes i enjoyed in morocco )

    I taught you had a bad Time there
    and you should Visit Morocco now Mashallah it's not the one you saw in the 80's lol when Spanish goods were all over the souks !
    now There great super-market that sells better quality and even cheaper or same price than those Spanish black market ones
    by the way the dish looks good ,just don't know about the taste
    I can make such a dish !with a delicious Moroccan house salad !!Yammy!

    Who has the time nowadays sis ?

    I buy it frozen which is much better than buying it in a tin. Frozen Artichokes are just as nice fresh.

    What a picture! So Yummy!

    I finish the same dish with 3akda. It's lemon juice mixed with egg yolk and parsley.

    I had the best time of my life in Morocco , I lived 11 years in Casablanca.we left in 2000. Hubby worked for a Multinational (Pricewaterhouse and coopers ) so we had a decent lifestyle and we lived in a nice area and lots of perks came with the job too.
    I Know about the Supermarkets , I did all my shopping in Marjane , Markro et.. and Delicatessen stores .
    I love Marrakeksh , that s where we spent most of our week ends . in late feb Kids would be skiing in the morning and by 2pm we are back at our hotel swimming in the pool .
    I would give anything to go back to Morocco and retire there but it is a long story and i wont go back i know , because of circumstances But i do go on holidays , I love shopping in Casablanca Shoes and handbags are just the best . Cant even find the same quality in Bristol unless im ready to spend a fortune .

    LOL @ Marjane, and yes totally agree with shopping in Casablanca. The quality you pay for is sooooooo cheap and the stuff you can get over in the UK & Europe is such a rip off. Morocco is great place to live if you have a decent job, but that’s like most place I guess. It’s great that you still go to Morocco on holiday. Where did your kids go skiing ?
