    How can it hold together with shredded chicken and egg. You won’t be able to roll the mixture into a paste. It would just fall flat.

    It will. Just add enough eggs to be able to shape the mix into patties, NOT more. The shredded chicken and breadcrumbs will make it hold together. But it's not as easy as that, you would need to be patient.

    I forgot to say you dip each croquette into flour, then into egg mixture, then coat with breadcrumbs before frying. You can even do this twice.

    If you use minced chicken then it won't cook thoroughly inside while the breadcrumbs coating will burn

    Another way of making chicken croquettes would be to prepare a béchamel with butter, flour, milk and salt. Cook it over low heat, stirring constantly, until thickened. Then add chicken, minced onion and parsley and spread in a greased shallow pan and chill thoroughly (this would harden it a bit and make it easy for shaping).

    Then form chilled chicken mixture into cigars and dip each into flour, egg mixture (whisk together eggs and a bit of lemon juice), then coat with crumbs and fry.

    Ahhh well then yes I agree it will hold together with flour.

    But with minced chicken I make them small and flat and add a teaspoon of mint sauce and roll with breadcrumbs - and serve with Thai sweet chili sauce.
