ESCABECHE
Escabeche is cooked, pickled fish. The fish is usually swordfish or tuna, but you can use sardines as well.
Ingredients:
3 1/2 lbs swordfish or fresh tuna, cut into small slices, or 2lbs sardines
1 cup flour
1 1/2 cups olive oil
2 large onions, sliced
2 large green peppers, sliced
1 large red pepper, sliced
1 cup pimento stuffed olives, sliced
1/2 cup capers
1 tablespoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1/2 cup olive oil
1/2 cup vinegar, to cover above ingredients
Directions:
1. Dredge the fish slices through flour.
2. Fry them at medium-high heat.
3. Place them on layers of paper towels to drain.
4. Saute sliced onions & peppers in the same oil as the fish.
5. Place the fish, sauteed onions, peppers, olives, capers, salt, pepper and paprika in a glass or ceramic bowl.
6. Cover the ingredients with equal parts olive oil and vinegar.
7. Refrigerate overnight.
8. Keeps for 7 days or more.

Bourak sardine (Beignets de sardines)
Ingredients
- 1 kg de sardines
- 1 oignon
- 1 bouquet de persil
- 1 pincee de poivre noir
- 1 pincee de canelle
- 1 demi c a café de cumin
- sel
Preparation
Nettoyez les sardines: enlevez les arêtes, disposer a plat.
Preparez la farce: Rapez l’oignon, hachez le persil, melangez oignon, persil et condiments.
Prenez une sardine ainsi ouverte. Mettez au milieu un peu de farce et recouvrez d’une autre sardine.
Enrobez de farine. Faites frire dans une friture assez chaude. Egouttez.
Servez avec des tranches de citron.

I almost died in Egypt eating sea food so the mere smell of it makes me sick to the stomach. Unfortunate because I used to love sea food. Can still handle my fish and chips though.

Fish & chips is a must when it’s horrible weather. I tried mashed peas in Brighton once and is better eaten during rainy days.
