I am posting in response to UmTareks question about shorba, insha'Allah this is the soup you mean.

I use:
1 onion
1 carrot
1 small/medium courgette (zucchini)
1/3 of a red pepper
4 fresh tomatoes or 1 tin plum tomatoes
2 - 3 tbsp tomato puree (concentrate)
meat on the bone
salt and pepper
ras al hanout
1 1/2 litres boiled water
Chuck everything into a pressure cooker whole, no need to chop anything, just peel and sling it in. Pressure cook until meat is tender. Remove meat and put to side. Puree the liquid and vegetables. Return meat to soup. Add more water if necessary. Add 1/2 cup of burghul wheat, 1/2 tin chick peas, 1 tbsp chopped mint, 1tbsp chopped fresh coriander. Simmer for a further 10 minutes.
