    At my Butcher it is called spring lamb . Sorry to be graphic (apologies to All vegans and vegetarians ) spring lamb is the most tender .

    biryani ("birr-yan-nee") is a pakistani speciality. it's basically a curry cooked with rice, as one dish. while you are boiling the rice, you throw the meat or veg curry on top (uncooked) and let them cook together. then stir it around so it's all mixed. it's usually served with riata, which is a yoghurt and mint sauce.
