In 3 days, I am having friends over for dinner. They are pure vegetarian (no fish and no eggs as well). I would like to cook Algerian for them. Since I am a big meat eater, I am stuck, can you assist with the menu please? Mucho gracias.![]()

this sounds like a meal with just hawadir- zaitun, labneh, jubneh- wait, they don't eat yougurt and dairy products...
how 'bout some Barasia (or Kurrat)? it's very simple. you saute chopped leaks with olive oil untill fully cooked (abt 10 minutes) and then add salt to taste. drizzle over dish some pomegranites and it's DELICIOUS
also mtabbal or baba ghanoush -the grilled eggplant dish.
here's another one of my favorite dishes- fasuleyeh-bzeit. and not just any fasuleyeh, it's called French-cut Green Beans.
You saute them in olive oil, medium to low heat, stir until done. add salt and black pepper and fresh cut tomatoes and keep cooking for another 5 to 7 minutes.
you eat all these dishes with bread by the way.

you know another easy dish? Ma2ali- fried veggies.
slice eggplant in half-inch slices and fry them. aslo fry colieflower.
add salt to them and eat 'em with slices of cucumber or parsely in pita bread.

Thank you folks... al khiyal gets the trophee again. I have opted to go along with his recommendations. Start with Vegi Harrira and followed by a Vegi couscous. And of course end it by a nice Algerian tea with mint. Too bad I am not good at making sweets, but a cake from the grocery store will do. I will keep you posted.
