I am not Algerian but my husband is. He like couscous, Shorba, anything that resembles Algerian bread, sardines, tuna. I wish I knew more about what is in the Algerian kitchen so I can make some great Algerian foods.

I found a really good site 'Cuisine-dz La reference de la gastronomie Algerienne'.It's in French and you have to sign up. But there is a section of recipies showing photos of the dishes with the recipies. Found this useful to do dishes for my husband.

Hi peter and welcome to the forum
We love fresh fruits
We usually stock pickles, beans, barley, lentils, Couscous and many kinds of home made cookies,
Jams, marmelades. etc. However, our everyday menus consist of veg, salads, meat, potatoes, bread and grilled or fried fish.
We consume a lot of lamb it is very special and the most delicious in the world.. ask any foreigner who has been there. The Couscous story it is not always true not every family in Algeria eat couscous on a weekly basis. I come from a family where we only eat it once or twice a year as we find it too heavy and cannot digested. We usually have it on wedding parties or for a birth of a baby.
Different region use different recipes. I come from Algiers, we have white sauces that is usually made of Onions, veg oil, cinnamon & white pepper. We have many kind of lamb and chicken stews that we add veg to it and eat it with bread. We very rarely use pasta or rice. We eat a lot of potatoes and bread. Our food is very tasty as we only consume organic grown goods. We have to wait for the seasons to consume certain fruits & veg we do not have all season goods and you find the aroma and taste are really worth the wait and the longing for a dish.
I live in Europe and long for our market, it is very different at home.
Umm, Sorry to tell you what you tried to describe is called Rashta and it much more refined than that.

As a Moroccan my favourite foods are the followings with an explanation :
THE MESHOUI : Oven-roasted or barbecued lamb. Generally, the impaled lamb, supported by two forks, is set at a certain height of the blaze. It is a succulent dish which usually starts a feast.
THE BASTILLA, Thin flaky pastry stuffed with chicken and almonds.
THE TAJINES, Stew of lamb or poultry, garnished with olives, almonds or prunes, etc,...
THE HARIRA, It is a thick soup with small meat cubes, lentils, garbanzo beans, beans, tomatoes, and exotic spices specific to this dish.

My grandma is 1/2 Moroccan and 1/2 Algerian, but she considers herself 100% Algerian. Her cooking says differently, though, lol. She taught her daughters to cook like her and I enjoy all these dishes. I love H'rira (So rich), Tajin (Sweet and salty), and Bastilla (Seafood and chicken). I would actually kill for a Bastilla, because my mother doesn't like to make it too much, so I don't get to enjoy it as often.
Algerian food is also very rich and diversed. We have the fwg:
1) Shorba: Soup with Angel hair and lamb meat and different flavors
2) Bourak: Meat, chicken, fish, or other stuffings, that are stuffed into a roll of Phylo dough (that's the closest that I can think of guys)
3) Shakhshoukha: described above
4) Couscous: Usually varies with each region. Both red and white sauce
5) Mergues: Algerian sausages. The best in the world!!!
6) Reshta: Algerian pasta. White sauce and chicken
7) Berkoukes: Thicker grain of couscous that also varies with each region.
Much, much, much more. I can't mention them all, because I'm making my mouth water. Take care everyone and laters!
