I love the Shakhshoukha, maybe you've never heard about, but it's known especialy in the east of algeria. I cannot image myself living without it.
My english is so poor I cannot describe it. If someone knows please write how to cook Shakhshoukha

hi lazzhar,
that's my favorite fodd too my mom made it in the eid, i know how to make it but it's not easy to explaine and it's very hard to make so sorry, i think that it's only for easter algerians.

Not really, its all over the country... I LOVE SHAKHSHOOOOKHA its one of the best algerian dishes ever.... you know algerian food... sometimes you cant stop eating until your stomack hurts... the stomack says hey hey u r eating too much slow down LOL and the mind keeps tellin u... buddy dont listen... you are still hungry. LOL
Also, whats special about algerian food is that its healthy... most of the time we use olive oil to cook instead of normal vegetable oil... and there are many salads... etc etc... so its all good.
Of course the number one dish in algeria is always COUSCOUS.

When I make couscous more than once a week my husband says that in Algeria you only make it once a week. Also in the USA, we rehydrate couscous and he says it is raw that way. He says it must be made in a couscouserie. Where can I find one? Where can I find an authentic Algerian cookbook? It is ok if it is in French. Thanks a lot!!!!!

Shakhshoukha is made of small cut pieces of kind of like very thin roti bread (Indian bread), but better, as a base. Then a red sauce with chick peas, meats, and different vegetables are placed on top. I think that it takes about 2 days to make, lol. The bread is a lot of hard work. It's steamed in a cous cousier very similar to how you steam cous cous. Sprinkle the shashouka with water then steam, turn out in to a jifna ( large bowl ) and sprinle with water again, then return it to the cousier and steam again. When its cooked turn it out into the jifna and rub some oil through it to seperate the shahshouka.
pile the shashouka onto a plate and serve with a red sauce made how you like it and enjoy......
