    Assalam Alaikoum all,

    For those who will be fasting in Ramadan, Hairira {soup} is a must for the break of fast {well, if you’re North African that is}. So here’s my favourite soup recipe packed full of vegetables and goodness.

    For those who are not familiar with this popular soup, it’s basically a thick Moroccan soup- apparently from Berber origin {if anyone can confirm please advise}. And it’s great for winter, you can cook this in many different ways with or without pieces of meat or C’men{ which is salt butter, or if you live in the UK, you’ll be familiar with Ghee}.

    This is the most simplistic recipe I found by Moulay Ali El Bouanani, but I have altered it to.

    Ok, here goes…………………….


    Ingredients ({or 4 people}


    1 cup of chick peas
    1 cup of lentils
    1 1/2 cup of white flour
    1/2 cup oil
    1/2 rice
    1/2 cup vermicelli {chaa'ria is fine}
    2 tablespoons of tomato paste
    1/2 kilo (1 pound) of plum tomatoes peeled {you can get these in tins /cans}
    1 large to medium large onion
    1 bunch of fresh coriander {In Arabic ~ kusbour}.
    1 bunch (small) of parsley
    1 or two sticks of celery
    1 1/2 litres of water (remember that as the pot is boiling, the water evaporates so you need to put water as you go)
    1/2 tea spoon black peper
    1/2 tea spoon of cumin
    1/2 tea spoon of curcuma (kharqoum) yellow root that is used a lot in Indian cuisine.
    1 table spoon salt
    2 cloves of garlic.

    Preparation:

    Cut all the ingredients finely and put them into a large pot note that the check peas need to be soaked overnight to ensure their cooking well with the other ingredients. Save the vermicelli, the flour and the egg for the last stage.

    Let boil for 40 minutes. When your check peas are cooked it's time to add the vermicelli and mix the flour in a bowl with warm water til it's liquid and there are no lumps in the bowl.
    Add some lemon juice and pour into the pot very slowly while stirring with a large spoon or any other wooden spoon.

    You should have a thikkish soup (it must not be too thick nor too watery, if it is too watery, you may want to add some flour) add the egg.

    ~ FOR ELWAHRANI & RUKS~

    Chourba ~ Soup of Vegetables originally from Fes city





    Ingredients for 6 people


    250 g of calf meat
    2 carots
    2 turnips
    2 potatoes
    2 branches of celery
    3 good tomatoes
    1 bouquet of parsley
    1 onion
    half tea cup of vermecilli
    1 soup spoonful of oil
    1 coffee spoonful of pepper
    1 pinch of safran


    Preparation

    Peel and cut the vegetables into little pieces(except for tomatoes), put them inside a boiler ,add the meat cut in little pieces plus the vegetables(except for tomatoes with parsley, crushed onion, oil salt, pepper and safran ;then add 2 litres of water, put the boiler on fire till boiling.

    Remove the tomatoes, wash them and plunge them for 1 minute into boiled water before peeling them, crush the pulp with a fork in a pan, put the tomatoes in the boiler and cover the boiler and leave it cook on a medium fire for 60minutes.

    10 minutes before serving, throw in the vermecilli and leave to cook Serve as soon as it is cooked.

    Thanks for the recipes - inshaAllaah I'm definately going to try the harira one. I tried a chorba receipe from MOurad's book - it tasted lovely - it was slightly different from this chorba one. But like you said, each region has their own way of doing things.

    Insha Allah I hope you are in good health and affairs. I’m glad you liked the Chourba from your cook book, and it’s great that your experimenting and trying out different recipes – you’ll soon have a wide scope of recipes under your belt insha Allah.
