    INGREDIENTS:

    (Note: measure = big glass)

    For the Dough:

    * 3 measures flour

    * 1 measure very fine semolina

    * 1 measure melted butter

    * Pinch of salt

    * Water

    For the Filling:

    * 3 measures ground almonds

    * 1 measure sugar

    * 1/2 glass orange flower water

    Plus:

    * Honey (about 2 measures)

    * Whole almonds

    METHOD:

    For the Dough:

    Mix flour, semolina, butter, pinch of salt and add water slowly till you get a smooth dough. Leave to rest aside for 30 minutes.
    Divide it into small balls.

    For the Filling:

    Mix almonds, sugar and orange flower water but not too hard.

    Spread the dough balls into very thin sheets, if you are using a machine, then you have to go for No 4 then No 7!

    Place the first sheet on the baking tray, brush lightly with butter, add the second sheet and brush with butter again, repeat this procedure until you have layered about 5 sheets.

    Spread the almond filling mixture evenly over the dough. Lay the rest of the dough in sheets again following the same procedure (about 5 sheets). Cut into diamond shapes with a sharp knife, decorate each baklawa square (diamond) with a whole blanched almond. Then pour up to 2 glasses of the melted butter on top.

    Bake at medium temperature for about 1 hour until it takes a golden colour. Once cooked, pour the honey over the surface, it has to be completely covered (honey should be cold). Let cool completely (ideally for 24 hours) before serving.
