This should be an easy one!
Maqlouba (Rice with Mincemeat)
Ingredients
(for ~1-2 people)
* Mincemeat
* Rice
* 2 tablespoons olive oil
* 5 cloves of garlic, crushed
* 1 tomato purée
* 1 red pepper, cut into pieces
* 1 chicken stock cube
* Pinch of salt (be careful the stock cube contains a lot of salt so you might not need to add salt)
Preparation
In a large pan, add oil, mincemeat, garlic, tomato, pepper, stock cube and mix with a wooden spoon while cooking on low-medium heat until mincemeat is almost completely cooked.
Boil water in the meantime. When the meat is cooked, cover with rice (spread it in a layer on top of the mincemeat) and add water slowly so that you don’t disturb the layering of mince and rice (water = 3 times the quantity of rice)
Cook covered over low heat for about 15 minutes depending on the rice packaging instructions.
To serve, mmm that’s the dodgy bit, don’t get it wrong
You have to invert the pot and unmold the Maqlouba on a serving platter. The meat will now be on top.
Note: you can add sliced mushrooms to the mincemeat, or any other vegetables you like!
