    I need some great tips on summer food, at the moment my main menu is:

    1)tchektchouka
    2)cold tunisian salad (grilled peppers, tomatoes and chilis)
    3)BBQ
    4)Fish and noodles

    Give us some good tips please

    Salam. Ceviche on some crispy thin bread, or crackers (biscuits for you Brits).

    Shashi, if you tell me precisely what you are looking for, I'll help you better. Salads, "soups" for the summer, seafood dishes, etc.

    Ceviche is deliciousI remember my ex girlfriend took me to her mom's house to have lunch. We bought fish on the way. Her mom made a ceviche and served us. I'm like what the hell, she's not going to cook the fish
    But it turned out to be very good.

    AZUL MM. Yes, I remember now...your Peruvian ex. My thoughts exactly the first time my family pulled this dish on me. I was like: THE FISH COOKS IN VINEGAR/CITRIC JUICES, AND NOT ON A GRILL OR PAN!!! My Baba makes a killer ceviche, and some of my uncles. This dish was brought over to Latin America by Asian fishermen (Japanese and Chinese) crossing the Pacific Ocean. It's well loved in all of Latin America, and has made its way to other continents too. I call ceviche, the Latin sushi LOL . My husband also loves it, so there you go another Algerian eating ceviche. I am going to post a recipe, so you can try it at home.


    A VERY side note: Remember whatever difficulties you are going through, be it with relationships - health - finances - etc., you're never given anything in this life you can't handle. I know faith is an ALMOST mute subject with you , but think about it. Some of your recent posts are a bit telling, and I think you're "laughing" it off. Incha'Allah you'll deal with your troubles.

    Okay, enough of mixing Martha Stewart with Oprah LOL!

    Hola. ¿Que tal Shashi? Ceviche is raw fish marinated in lemon and/or lime juice...some ppl include a bit of white vinegar. These acids cook the fish. The quality of the fresh is so important---straight from the sea. Here's a recipe...

    2 pounds of sea bass, flounder, sole, etc. (white-fleshed fish)
    1 cup of lime juice
    1/2 tsp salt
    1 garlic clove, chopped finely
    1 scotch bonnet pepper
    1 tsp of crushed oregano
    1 whole green chili
    1 tsp of chopped parsely
    1 tsp of chopped cilantro
    1 med onion, minced

    Cut the fish into strips 1 1/2 inches long and 1/4 inch wide. Soak the strips in lightly salted water for 1 hour to tenderize. Drain well. Put the fish in a bowl and add the lime juice, then salt, garlic, peppers, oregano, and refrigerate for 20 minutes---overnight is best.

    Just before serving, mix in the parsely, cilantro, and onion.

    Other recipes

    Pecan Chicken

    Just cut up chicken in strips, add 1/2 tsp of ginger, 1/4 green onions/scallions, 2 garlic cloves, 1 cup of chopped pecans, and 3 tablespoons of soy sauce. Salt and black pepper to your liking.

    Mix the chicken with the soy, ginger, salt (shouldn't be a lot remember many soy sauces can be very salty), black pepper---let stand for 30 minutes. Drain the chicken leaving the marinade. Heat a pan with some peanut oil and lightly brown the chicken. Remove the chicken from the pan and add the other ingredients, then add after 1 minute the left over marinade. Pour this sauce now over the chicken. This dish is very quick...you can even prepare the chicken to marinade over night, then cook quickly the next day. This is great with a spinach salad. Or you can add in season fresh veggies to the saute and make a sort of stir fry.

    Mushroom Omelet

    Some chopped mushrooms, eggs, minced onion...garlic... green pepper, salt and blk pepper to taste, and some olive oil to cook with. Beat the eggs first, then add the salt and pepper, beat a bit more, add the remaining ingredients and fold into the egg mix. Heat up a pan with olive oil (don't over do it with the oil just enough to coat the bottom)and when it's hot add your egg mix. Cook on both sides to get an omelet. The more eggs you add, and other ingredients, the more ppl can this dish be made for. Sprinkle some paprika powder over the omelet when done. This dish is good to cut up in thin slices and set next to a platter of olives, cheese, a fruit tray. Stick tooth picks into everything to eat like finger foods. Serve with some Spanish Sangria and you're in business.


    The recipes here aren't as tedious as they appear.
