Tunisian stew rich in tradition [01:23]
Merely a stone's throw away from the Algerian border is the Tunisian town of Nefta. The large oasis town became a trading hub, with routes spread across the Sahara desert, and over the centuries people of various nationalities and countries contributed to the flow of gastronomic influences. While villagers now reside in proper houses, they still choose to spend the summer season in the oasis, preparing and savoring a local dish called zitouna. Berber women cook the lamb in a stew of tomato sauce, onions, and flavor it with hot peppers and olives -- ingredients which have been derived from the Romans, Turks, Arabs and Pheonicians. Such multicultural influence has distinguished Tunisian cuisine from the rest of its neighbours, and desert gastronomy in particular is deeply rooted in tradition. Ammar Esseghir says his family visits the oasis on a weekly basis and prefers to cook a meal on a bonfire instead of a gas stove. Stews have withstood the effects of time and modern preparation methods, and the Berber people are loyal to their traditions even though Tunisia is a rapidly developing country. Un songe d'été : c'est une forme de métaphore qui illustre l'engagement du Fennec du Berry pour le rapprochement des peuples Euro- méditerranéens depuis plus d'une dizaine d'années. Par ailleurs, Le Fennec du Berry se bat pour préserver une partie de son héritage du Sahara face à un monde moderne bouleversé par la globalisation. Au cours de ces dernières années, Le Fennec du Berry a organisé plusieurs expositions et des repas à thèmes (dernier en date : Sahara en Berry - avril 2009). En janvier 2010, il participa à la semaine du Maghreb à Bourges (Cher). Il conta de vieilles histoires de Touggourt. Cette action fût dirigée par la directrice du réseau des bibliothèques de la ville.

The lost Rosetta رشيد المفقودة [06:54]
Rosetta (Arabic: رشيد Rashid, French: Rosette) is a port city on the Mediterranean coast of Egypt. It is located 65 km (40 miles) east of Alexandria, in Beheira governorate. It was founded around AD 800. With the decline of Alexandria following the Ottoman conquest of Egypt in 1517, Rashid boomed, only to wane in importance after Alexandria's revival. During the 19th century it was a popular British tourist destination, known for its charming Ottoman mansions, citrus groves and cleanliness. The town of Rashid came to be known in the West as Rosette (Rosetta), the name by which it was referred to by the French during Napoleon Bonaparte's campaign in Egypt. It is famous as the site where the "Pierre de Rosette" (Rosetta Stone) was found by French soldiers in 1799. Rosetta is the modern representative of the ancient Bolbitine, which lay a little farther north. In the Middle Ages Rosetta was a place of considerable commercial importance, and it continued to flourish until the construction of the Mahmudiyeh Canal and the improvement of the harbour at Alexandria diverted most of its trade to the latter city. Rosetta also witnessed the defeat of the 1807 British Fraser campaign, on September 19. The British were trying to occupy Egypt after the French army had left the country. September 19 later became the national day of the town. Al-buhaira celebrates that year.
